About Just BE Kitchen
Just BE Kitchen, Colorado's largest 100 percent gluten-free restaurant group, has evolved from a humble MBA project idea into a thriving, female-owned, fast-casual dining concept. Founded by Jennifer Peters, the journey began when she presented the concept in her MBA class, receiving encouragement from her professor and mentorship from a former CEO of Burger King. Despite facing numerous rejections from landlords and banks due to her lack of a partner, restaurant experience and the perceived riskiness of her concept, Jennifer's perseverance led her to test her kitchen-made products at farmers markets and gyms.
After a year of hard work and dedication, she secured a landlord willing to take a chance on her, and Just BE Kitchen opened its doors in Denver's LoHi neighborhood in 2017 as Colorado's first completely gluten-free restaurant.
Just BE Kitchen's menu is 100 percent free of gluten, grains, refined sugars, dairy and seed oils. Just BE has a drool-worthy menu that appeals to health-conscious families, high-performance athletes, those living with food allergies and anyone seeking an 'ooey, gooey, stick-to-your-ribs' kind of meal that just so happens to be allergen free.
Just BE opened a second location in the Denver Tech Center in 2022, adjoining the gluten-free brewery Holidaily Brewing Company as a match made in gluten-free heaven. The third location, in Boulder, opened in December 2023.
Just BE Kitchen stands out as a trailblazer in allergen-friendly dining, and Jennifer has her sights on it being "the Chipotle of gluten-free dining," bringing allergen-free food to multiple communities. Today, Just BE is Colorado's largest 100 percent gluten-free restaurant group. JustBE is aiming to open 10 more locations in the next five years, further cementing its place as a leader in the world of allergen-free, health-boosting dining. Just BE's list of impressive superlatives includes being the first paleo restaurant in Colorado; the first Whole30 approved restaurant based in Colorado; the only 100 percent paleo restaurant to be featured on the Food Network's Diners, Drive-Ins and Dives; and voted one of Denver's best gluten-free restaurants by Eater, Westword, 5280, The Denver Post and others.
Dishes include French Toast Sliders made with almond flour and toasted coconut, all-day Fulfilled Burrito with Just BE Kitchen's famous housemade gluten-free tortilla, "cheddar wiz" and choice of chili, Food Network-featured Chicken and Dumplings, Mixed Vegetable Curry, and Shepherd's Pie with slow roasted brisket and sweet potato whip. The menu is usually changed twice each year, highlighting craveable comfort foods of the season, converted to Just Be Kitchen's way of consciously cooking. The Denver Tech location even boasts a "Mindful Market," offering superior pantry products such as housemade pickles, ketchup, salad dressings, and salsa – all adhering to Just BE's allergen-free standards.
Beyond being a restaurant, Just BE Kitchen has become an inspiring holistic wellness and community-driven hub. Passionate about promoting health and wellness knowledge, the Just BE locations host in-person events, health and fitness challenges, and online cooking classes.
